Under the responsibility of the R&D Lab Manager or Lab Coordinator, the R&D Technician is responsible for the use of pilot plant and lab scale equipment to produce new chocolate and compound products within country specific legal requirements, to customer specifications, and in a safe fashion. Evaluation of the physical and chemical parameters of the products will be required using such analytical instruments as micrometers and viscometers. The technician must be able to follow directions and keep accurate, thorough written records that can be used to reproduce experimental conditions. This role will also assure that raw materials are available in the lab, maintain traceability of ingredients, follow environmental monitoring and micro protocols and release of samples, and follow-up of any equipment or lab maintenance. The R&D technician will also assist the R&D technologist, PE Specialist or Customer R&D in assigned projects.


Key responsibilities include: 

●    Prepare and send chocolate/compound samples in the laboratory to meet project specifications and timelines.
●    Follow environmental monitoring and micro release procedures.  Manage release log.
●    Compile and analyze the results obtained in the production of the samples produced on the pilot equipment.
●    Use the data collection system to enter information related to the projects and samples produced.
●    Assures availability of materials (raw materials, packaging, general supplies, etc.)  in the R&D lab.
●    Tracks and records new materials received in the R&D lab.
●    Participate actively in the different projects with the R&D Team.
●    Participate actively in sensory evaluation of different raw materials and finished products. 
●    Maintain a clean and orderly work environment.  Ensure proper care and maintenance of the pilot equipment.
●    Committed to providing a safe food product and works within all regulatory requirements.


About you:

●    Academic Training: Technical degree or Certificate preferred or applicable experience working in a food laboratory/Research & Development.
●    Experience: Relevant experience in the food industry is an asset; knowledge of food safety, hygiene and worker safety.
●    Personal attributes: Be resolute, capable of working under pressure and managing many tasks simultaneously.
●    Work attributes: Organized and works well with others in a group setting.
●    Travel requirements: 0% (May require travel as support to a customer visit/collaboration session but rare).
●    A hands-on individual that can work within a group.
●    Physically capable of handling heavy equipment and/or ingredients (50 lbs.) and high workload of the lab.
